
Wilted celery? Cut the ends off each stalk, stand stalks in a tall glass of
water and place in the refrigerator. Celery will be crisp in just a few hours!
Soak wild game (squirrel, deer, rabbit, etc.) in beer in a covered bowl in the
fridge overnight to tenderize the meat and remove the gamey taste.
To help prevent freezer burn, seal meat tightly in plastic wrap or remove all
air from freezer bags before placing meat in the freezer. Place fish or frog
legs in a freezer bag, add enough water to cover the meat and one
tablespoon of salt per gallon bag.
Fried Green Tomatoes all year long? Sure, just pick all the green tomatoes
from your vines before the first frost of the season. Wash and slice
tomatoes, coat each side with flour. Place the tomatoes in a single layer on
a wax paper lined cookie sheet in the freezer. Once frozen, package them in
zip top sandwich bags putting enough for one meal per bag. Then fill a
gallon size zip top freezer bag with the sandwich bags. This double bagging
helps prevent freezer burn. When you're ready to prepare, do not thaw the
tomatoes. Simply remove from freezer, coat again with flour or corn meal,
place in heated oil and fry until golden brown. Yum, yum - - fried green
tomatoes in the middle of winter make a perfect side dish to most any meal.
Freezing Ripe Tomatoes: Tomatoes can be frozen whole, sliced, chopped, or
pureed, raw or cooked, as juice or sauce, or prepared in the recipe of your
choice. Thawed raw tomatoes may be used in any cooked-tomato recipe,
they cannot be substituted for fresh tomatoes, since freezing causes their
texture to become mushy. Tomatoes should be seasoned just before serving
rather than before freezing as freezing can either weaken or strengthen
garlic, onion, and herbs. Select firm, ripe tomatoes. Wash, then dry by
blotting with a paper towel. Cut away the stem scar, place the tomatoes on
a cookie sheet and freeze. Tomatoes do not need to be blanched before
freezing. Once frozen, transfer the tomatoes into freezer bags and seal
tightly. To use remove them from the freezer and run a frozen tomato under
warm water in the kitchen sink, the skin will slip off easily.
